Homemade French Dips a la Michele

I love French Dips! I order them whenever we go out to eat.  I usually get my ingredients at Henry’s Marketplace.  Here’s how I make them at home:

2 cans French Onion Soup
1 lbs. Boar’s Head roast beef, sliced thin
1/4 lbs. horseradish cheddar, sliced
Cream horseradish, to taste
Grilled sweet onions and mushrooms (if desired)
Package of your favorite sandwich rolls (I’m a fan of Dutch crust rolls, but usually get whole wheat something)

Put the roast beef and soup in a large pot on the stove. Cook on medium heat until it just comes to a boil and is heated through. Cut 4 rolls in half and toast. Spread horseradish, if desired. Drizzle soup onto both halves of roll. Pile meat, cheese and grilled onions and mushrooms on one half of roll. Top with other half roll. Cut diagonally in the center (better for dipping). Pour leftover soup into dipping bowls. Serve steaming hot with potato salad or tater tots. Kids love to dip, too!
