- 12 corn tortillas
- 4 cups diced chicken breast
- 1 (4 oz) can of diced green chilies
- 1 large white onion, chopped
- 1 lb. grated sharp cheddar cheese
- 1 can chicken broth
- 1 (10 oz) can cream of chicken soup
- Combine chicken, chilies, onion and chicken soup in a large bowl
- Cut tortillas in half and arrange 6 halves in bottom of a 9 x 13” pan sprayed with Pam
- Spread ½ of the chicken mixture over tortillas, top with 1/3 of cheese
- Repeat layers (tortillas, chicken mixture, cheese)
- Just before baking, pour chicken broth over top to add moisture
- Cover and bake in 400 oven around 45 minutes until hot and bubbly
- Serve with sour cream, salsa, avocado or guacamole

Prehistoric Pets in Fountain Valley is a really fun, free outing (unless of course you end up coming home with your own Prehistoric Pet!) It is a huge reptile store, where kids can get up close and personal with lots and lots of crazy looking reptiles. The store also holds a 2000 gallon pond filled with giant tropical fish and 400lb. Galapagos Tortoises. Quite an amazing sight for little ones (and I have to admit I thought it was pretty amazing too!) Jurassic Parties offers private parties at your venue or in-store, most popular being a one hour presentation with 15 – 18 animals. Great hands on learning experience for kids!

We recently discovered a wonderful park, Irvine Terrace Park, in Corona del Mar. It is an amazing playground with a beautiful harbor view. There are public bathrooms adjacent, tons of running space, climbing walls, teeter totters, swings (baby and big kid) and two picnic tables under covered lattices. To get there, plug this into Mapquest “Seadrift Dr at Evita Dr Corona del Mar, CA 92625.” This park is # 8 on the OC’s 10 best playgrounds.

When I pop into Fairytales, I almost go into “cute overload.” There are so many cute things to feast the eyes on, you almost don’t know where to focus first! From girly-girl clothes you just die over to mini uggs to darling gifts for moms-to-be to racks of bejewled barrettes for little locks to …. I could go on and on. They have it all! Clothes, gifts, toys, books, diaper bags, you name it. Just be prepared to have the urge to wander aimlessly for awhile just to take it all in! With two great locations in San Clemente and Dana Point, if you live in OC, this shop is a MUST visit. If you are out of the area, all of the darling-ness is also sold online, with more labels and brands be added every day. Guess what mamas? How is it already September? I can’t believe how fast this summer went. It seems way too early, however, October and pumpkin time is right around the corner…that’s why I have to share this new fabulous find! I came across the Wishcraft catalog (by Chasing Fireflies) the other day and was blown away by the costumes! You should see the Marie Antoinette and Queen Elizabeth get-ups for little girls. They are so elaborate, and really pretty reasonable considering. I hope I am able to even get Emma INTO a costume this year. Last year, at 18-months, she was the saddest Tinkerbell you have ever seen. She only lasted in it for 5 minutes, it was a complete crying disaster. We had a Halloween party at our house and she was the only kid not in a costume. Luckily one of my husband’s coworkers got her a little orange candy corn t-shirt, so she wore that to her party. I am sure everyone was thinking how low-budge I went on her costume! Hopefully this year will be different, we will see. I don’t know if I could get her in that Marie wig, but the sassy go go dancer is awfully cute!
