Next month at Montage Laguna Beach celebrity chefs will come together for a a culinary event to end childhood hunger and 100% of the ticket proceeds would go to No Kid Hungry.

I wanted to share how you can be a part of it and make a difference in the lives of the nations’ hungry children.

The one-of-a-kind, right in our own backyard, spectacular Montage Laguna Beach, will host the 9th annual Share Our Strength Taste of the Nation® Laguna Beach event on May 15, 2016 and I would love to see you there.

What is it, you wonder?

Let me tell you because I have been lucky enough to attend in past years. It’s ahhhhhhhh-MAZING.

It’s an afternoon where you get to get a little dressed up and sneak away with your hubby for an event that is sure to become a highlight of your entire year. Guys, if you are married to a foodie, tickets to this event would make the perfect Mother’s Day gift.

On the outdoor lawn at Montage Laguna Beach, against a background of sparkling Pacific water, a number of celebrity chefs will  prepare fresh farm-to-table delicacies to further Share Our Strength’s mission to end childhood hunger in Orange County and across the nation.

You and your sweetie can stroll from station to station and enjoy delectable, knock your heels off, tastings, fine wines, signature cocktails, while enjoying picturesque panoramic views to the sounds of live entertainment.

As contributors to the charity, guests can choose between the following event packages:

Celebrity Chef Tasting  |  3:00 p.m. – 6:00 p.m.

Tell me more about No Kid Hungry 

One in five children in this country struggles with hunger, including more than 2,487,750 children in California.

Take a moment for that to sink in. We all know what it feels like to be hungry. We call it “h-angry” in our house because being hungry can also make you angry and grumpy. Yet, 1 in 5 children in this country struggle with hunger daily. Heart-breaking. 

The No Kid Hungry campaign is ending childhood hunger in this nation by ensuring all children get the healthy food they need, every day, by connecting them to nutrition programs like school breakfast and summer meals and by teaching families how to cook healthy, affordable meals at home.

One hundred percent of ticket proceeds from Taste of the Nation benefit No Kid Hungry thanks to generous support from national sponsors Citi and Sysco®. Taste of the Nation Laguna Beach for No Kid Hungry is also supported by national sponsors Food Network, and OpenTable. The 2015 Laguna Beach event raised $200,000 which was enough to fund $2 million meals for hungry children. Awesomeness.

Montage Laguna Beach will host the 8th annual Share Our Strength Taste of the Nation Laguna Beach event on May 17, 2015 at the oceanfront resort where the nation’s hottest chefs cook to fight childhood hunger.

My husband and I attended this event a few years ago, and let me tell you, it was one of the most memorable date nights, or rather date days, we have ever had.

First, it gives you a reason to get dressed up, which, for this mom is a real treat. Then, with one step onto the Montage Laguna Beach grounds you are immediately transported into a different world. Add in a glass of crisp Pinot Grigio or festive bubbly while gazing out to the Pacific and you might think life couldn’t get better, but wait, the fun has just begun

Imagine a number of celebrity chefs all in one place where you get to sample bites from each one (and make your husband go back to get you seconds.) Yes! You go from station to station and sample dishes from world renowned chefs who are cooking right in front of you. I was a little starstruck. So were my taste buds. It’s a sensory soiree from start to finish.

But dreamy date day and delicacies aside – the best part of this event has nothing to do with skipping around Montage Laguna Beach on a gorgeous Sunday afternoon tasting gourmet food from celebrity chefs (okay, well maybe a little…) but truly the BEST part of this event is the cause.

Ending Childhood Hunger

This month, Romano’s Macaroni Grill, in partnership with Share Our Strength’s No Kid Hungry campaign is doing something pretty spectacular.  You see, for writing this post and sharing a favorite Italian recipe, Macaroni Grill is donating 500 meals to children who need them for participating bloggers. Soooooo awesome!

We have been lucky enough to have my mother-in-law, a.k.a Lorayne (maiden name Paoletti=Italian!) in town visiting this past week and she made this delicious dinner for our family.  With the back to school madness upon us this Deconstructed Chicken Parmesan Bake is an easy weeknight dinner (no breading or heavy labor involved!)  Serve it with some simple spaghetti and salad and it’s great for entertaining as well!

Her recipe called for boneless skinless chicken breasts but we subbed in boneless skinless chicken thighs – if you haven’t tried them, do!  They are less likely get dry as chicken breast can and are more nutrient dense.  Their fat content is a bit higher but only a little bit of that is the unhealthy saturated fat.

What you Need:

2 tablespoons Extra Virgin Olive Oil

2 garlic cloves, finely chopped

1/4 teaspoon crushed red pepper flakes (or less if you don’t like spicy)

12 boneless skinless chicken thighs (or 6 boneless skinless chicken breast if you aren’t feeling adventurous)

2.5-3 cups prepared Marinara Sauce

1/4 cup fresh basil, chopped

1 8 oz package shredded mozzarella cheese, divided

1/2 cup grated parmigiano reggiano cheese, divided

1 5 oz package garlic croutons (she used the big artisan ones which I really liked, but you could use smaller croutons to make it easier to cut)

Ready, Set, Cook!

Preheat the oven to 350 degrees F.

Coat the bottom of a 9×13 casserole dish with olive oil and sprinkle with garlic and red pepper flakes.

Arrange chicken in bottom of the dish and pour marinara sauce over the chicken, then sprinkle basil over the marinara sauce and top with half the mozzarella cheese, followed by half of the parmesan cheese.  Sprinkle on the croutons, then top with the remaining mozzarella and parmesan cheeses. Make sure to cover the croutons enough with the cheese to protect them from burning.

(If making ahead: at this point you can put in the fridge until you are ready to bake but be sure to pull out of fridge at least 20 mins prior to baking to let come to room temperature a bit).

Bake in preheated oven uncovered until croutons are golden and the chicken is cooked through about 45mins – 1 hr (depending on how big your chicken pieces are).  An instant read thermometer should read 160 degrees in the thickest part of the chicken. Enjoy!
