How is it already September? I can’t believe how fast this summer went. It seems way too early, however, October and pumpkin time is right around the corner…that’s why I have to share this new fabulous find! I came across the Wishcraft catalog (by Chasing Fireflies) the other day and was blown away by the costumes! You should see the Marie Antoinette and Queen Elizabeth get-ups for little girls. They are so elaborate, and really pretty reasonable considering. I hope I am able to even get Emma INTO a costume this year. Last year, at 18-months, she was the saddest Tinkerbell you have ever seen. She only lasted in it for 5 minutes, it was a complete crying disaster. We had a Halloween party at our house and she was the only kid not in a costume. Luckily one of my husband’s coworkers got her a little orange candy corn t-shirt, so she wore that to her party. I am sure everyone was thinking how low-budge I went on her costume! Hopefully this year will be different, we will see. I don’t know if I could get her in that Marie wig, but the sassy go go dancer is awfully cute!

My family and I were going around the table last Thanksgiving answering the question, which skill or talent do you wish you had? My dad’s answer was “speak a 2nd language” and I was like “That is a great answer! Me too!” My real answer was “cook ” but that really perplexed everyone as they considered cooking not a skill or talent, but rather an issue of effort and motivation. A whole debate ensued, and I argued that my lack of motivation was because of my lack of skill and therefore, I wished I had the motivation to cook! I had a hard time selling that one, anyhow, I digress…
For those of us that are solo-lingual, wouldn’t it be GREAT to speak another language? I often wish I had learned another language as a child when it would have been so much easier than learning as a young adult. That being said, now we have the chance to give our kids an edge and introduce them to YakAcademy, a fun program that teaches foreign language classes for kids ages 1 – 10! Such a BRILLIANT concept for our little sponge-brained kiddos! And now, YakAcademy has come to OC! Opening this month in Mission Viejo, you can enroll your kids in fun language classes taught full immersion through art, movement, song and play. And, hey mom, you will probably learn a thing or two! We love Bill Barber Park in Irvine! The park has a huge tot lot with equipment for all ages. There are bridges so kids can get onto the equipment from the upper level and vice versa. It also has a great climbing area, and distinct separate play equipment for toddlers and big kids. My daughter also loves the “froggie fountain,” which is a beautiful fountain in the center of a trellis lined courtyard area. The first time we went there we were a little confused on where to park. Off of Harvard, you will turn into the parking lot at the light “San Juan.” There is usually plenty of parking. Click this link for directions. There are 4 nice covered picnic areas, the restroom is close-by, and as luck would have it for me this weekend, a concession was open for the soccer games when I was in dire need of a Diet Coke fix! Only downfall is that other than the covered picnic areas, there is not a lot of shade, so wear your hats and SPF in the summer months as it can get a bit toasty.

I will admit it. I am not a cook. However, even the cooking-challenged (that would be me) can make this recipe. Substitute whole wheat pasta and breadcrumbs for an even healthier meal.
- 6 boneless skinless chicken breasts
- 1 cup flour
- 1 teaspoon kosher salt
- ½ teaspoon pepper
- 2 large eggs
- 1 1/4 cup seasoned dry bread crumbs
- 1/2 cup parmesan, plus extra for serving
- Unsalted butter
- Good olive oil
1. Pound the breasts until they are ¼ inch thick (put them between wax paper and use a meat mallet or rolling pin) – or the easiest way is to buy the thin cut breasts
2. Combine flour, salt and pepper and put on a dinner plate (1st dish)
3. Beat the eggs and 1 tablespoon water in a bowl (2nd dish)
4. Combine the bread crumbs and parmesan cheese in a bowl and put on a plate (3rd dish)
5. Coat the breasts on both sides with the flour mixture, then dip both sides in the egg mixture, and then dredge both sides in the bread crumb mixture
6. Heat 1 tablespoon oil and 1 tablespoon butter in large sauté pan
7. Cook 2 or 3 breasts at a time on med-low heat for 2 to 3 minutes each side, until cooked through
8. Add more butter and oil and cook the rest
Serve over noodles and pasta sauce, sprinkle with parmesan cheese. Also great with couscous and broccoli or just a simple green salad if you are eating light.
