Easy Gazpacho Recipe

About 11 years ago my dear friend Melisse brought me back this Gazpacho dish from her visit to Spain. She was near the end of her trip and the shop she bought it from didn’t offer shipping so she lugged it through the rest of her travels to fly home with it as a carry on. One of the coolest, most thoughtful gifts I’ve ever received. The girl must have totally understood my obsession with Gazpacho. Every summer I make Gazpacho and put it in this special dish and I call or text her to thank her.

So I thought I’d share my favorite easy Gazpacho recipe.  I’ve tried many different versions and this is super simple and doesn’t rely on store bought tomato juice.

Serve with quickly seared shrimp skewers for a full meal.  Oh, and if one of your diners thinks they don’t like cold soup, put out some tortilla chips and watch them dig in!

Whole Foods Market Newport Beach: A Shopping Wonderland

Jen and I just spent an entire morning perusing the new Whole Foods Market Newport Beach wonderland (the word market just doesn’t seem to do it justice) and WHOLEY MOLY, if it weren’t for a looming preschool pick-up, both of us could have spent the whole day there!

Upon entering the store we were greeted by an inviting rainbow of colorful, perfectly ripened produce, stands and stands of it.  This might sound silly but it felt like happy food: Heirloom tomatoes, Bartlett pears, Honeycrisp apples, golden beets, turnips, endive, swiss chard, cabbage.

The care they put into their produce was subliminally saying: Eat these beautiful whole foods and you will feel happy.

It was a little bit of sensory overload because we wanted to take it all in and enjoy but we weren’t sure where to begin (in a good way).

By now you all probably know I hate to cook, so it really was a match made in heaven when I found out my new amazing Sales and Marketing Director, Susanne, went to culinary school and used to work as a personal chef!

My Fave Trader Joe’s Products

Someone-I-know-knows-someone who’s job it was to just travel around the world to amazing destinations looking for new products to grace the shelves and freezers of Trader Joe’s~ can you say DREAM JOB!?!?

In some cases there are probably equivalent products in a regular grocery store but for some reason doesn’t just feels a little healthier & taste a little bit better from Trader Joe’s?
